Engine-Starting Oat Cakes

They say breakfast is the most important meal of the day.  Here's a great way to start yours.  I make these tasty pancakes once a month or so, usually on the weekend.

serves 4

1 1/2 cups oatmeal (uncooked - quick oats is fine)
2 cups buttermilk (I use nonfat)
1/2 cup flour
1 tsp sugar
1 tsp baking soda
1 tsp salt
2 beaten eggs

Mix oatmeal and milk in bowl and let sit 15 minutes.  Then stir in the other ingredients and cook like pancakes on a hot griddle.  Serve with bacon.  (I like these with maple syrup.)
