Spinach Cheese Noodle Soup

| If you've visited my recipe
page in the past, you know that I love soup, especially on cold,
winter days. Here is a family favorite.
Feeds 4-6, depending.

1 Tbsp oil
1/2 cup chopped onion
1 clove garlic, cut in half
3 chicken bouillon cubes
3 cups water
2 cups fine egg noodles (uncooked) |
3 cups milk (skim is
fine)
2 tsp salt
1 package chopped spinach, thawed and drained
1/4 lb each grated cheddar and grated Swiss cheese
paprika and croutons for garnish |
In a large pot, heat oil. Sauté onion and garlic
approximately 5 minutes, until tender. Add the water and bouillon
cubes and heat to boil, stirring to dissolve bouillon. Once
mixture boils, gradually add noodles and salt so that it continues to
boil. Simmer uncovered for 5 minutes. Stir in milk, spinach
and cheeses, stirring to melt. Don't let the soup boil!
Garnish with paprika and croutons, and serve with
bread and a green salad.
