Dark Chocolate Peanut Butter Cake

I love peanut butter and chocolate.  The combination is heavenly.  This cake uses a secret ingredient no one will ever guess--beets!  Believe it or not, they add moisture and a subtle flavoring that adds to the richness of this cake.
Cake:
2 cups flour
3/4 cup unsweetened cocoa
1 3/4 cups sugar
1 1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 1/2 cups buttermilk
3 eggs
1/2 cup sour cream (can use nonfat)
3/4 cup butter, melted
1/2 cup raw beets, grated
Buttercream:
6 oz butter, softened
6 oz creamy peanut butter
1 1/4 cups powdered sugar, sifted
1/2 tsp vanilla extract

Chocolate Fudge Glaze:
1/4 cup nonfat milk
2 tbsp butter
1/4 cup unsweetened cocoa
1 tsp vanilla extract
1 cup powdered sugar, sifted

Serves 12.  Preheat oven to 350 degrees.

To prepare cake:  Sift the dry ingredients in a mixing bowl.  Set aside.  Combine the buttermilk and eggs in a separate bowl.  Add to the dry ingredients; mix until fully incorporated.  Slowly add the sour cream, butter and beets, just until mixed in.  Spray a 10-inch springform pan with non-stick cooking spray and line with wax paper.  Pour in the batter.  Bake at 350 degrees for approximately 50 minutes, or until the sides pull away but the center is soft.  Cool thoroughly, run a knife around the edge and release the springform.  Invert on a serving platter.  Peel off the wax paper.  When totally cool, add buttercream.

To prepare the buttercream:  Whip the butter and peanut butter together until well-blended.  Slowly add the powdered sugar, then the vanilla.  Whip until thick and creamy.  Frost the cooled cake with the buttercream.  Freeze or refrigerate the cake until the frosting is very firm.  Then add glaze.

To prepare the glaze:  Place the milk and butter in a small saucepan and bring to a boil over medium heat.  Add the cocoa and mix well.  Add the vanilla, then the  powdered sugar and stir until fully combined.  Pour over the cooled cake and let it drizzle over the edges.  Do not try to completely cover the sides.
