Blackberry Good Stuff

I got this recipe years ago, when a friend made it. She used canned pie filling, but I prefer the fresh berries. She didn't know the name of the recipe, so I named it Blackberry Good Stuff.If you don't have blackberries, substitute blueberries, apples, pears, cherries, or any fresh fruit.
I guarantee that a pan of this stuff won't last long. At my house, no more than two days. |
Preheat oven to 375.
Combine:
1 cup quick-cook oats
1/2 cup unbleached flour
1 cup sugar
Cut in 1/2 cup soft butter until crumbly.
Spread half the mixture in an 8 x 8 or 9 x 6 lightly greased pan. Bake at 375 for 10 minutes. While baking, mix filling:
Combine:
2/3-1 cup sugar
1/4 cup flour
1 1/2 Tbs lemon juice
t tsp tapioca
Pour over and mix gently with:
4 cups fresh berries
Reduce oven temp to 350 degrees. Pour berries over baked crust. Sprinkle with remainder of the crust. Bake 45 minutes.
Delicious warm or cold, served plain or with vanilla ice cream.
