Broiled Tomatoes

Tomatoes, tomatoes--I love 'em.
Especially now, when they're fresh and sun-ripened. I'm
always on the lookout for new and interesting ways to serve
them, and this is the recipe everyone loves. So easy, too,
and there are two toppings to try.

6 large ripe
tomatoes
oregano to taste |
topping:
either 3/4 cup breadcrumbs mixed with 1/3 cup stick
melted butter and 12 Tbsp grated Parmesan cheese OR
12 slices Mozzarella |

Cut tomatoes in half, place cut-side up on lightly
greased cookie sheet. Spread breadcrumb mixture evenly over tomato
halves or top each with Mozzarella. Sprinkle with oregano.
Place 4-6 inches from heat source and broil 5-10 minutes, until tops are
puffy and lightly browned.
Serves 6.
