(this takes one hour to
cook, so you may want to make it ahead)
Serves 12
Preheat oven to 350
2 cans freestone peaches (I use any canned peaches, preferably
unsweetened)
1 can pears
2 cans apricots
1 can pineapple chunks
1 cup light brown sugar, packed
1 Tbsp curry powder
1/2 stick butter
Drain fruit, arrange in a 13 x9 inch baking dish. Mix sugar and
curry; sprinkle over top. Dot with butter and bake for one hour.
