Bibingka

Years ago I worked with a woman from Singapore. What a great cook she was. When she made bibingka, I begged for the recipe.  My husband calls these treats "fun" because of the interesting texture and wonderful flavors. It's easy to make, too.
  • 3 eggs
  • 4 Tbs butter
  • 2 cups sugar
  • 3 cups milk (2% works well)
  • 1 box sweet Mochiko rice flour (buy in the Asian section of your grocery store)
  • 1 heaping tsp baking powder
  • 1 1/2 cups coconut
  • 1 tsp vanilla

Preheat oven to 350. Using an electric mixer, combine eggs, butter and sugar until light and fluffy. Combine flour and baking powder. Add half the milk, then half the flour mixture, mixing well. Repeat with remaining milk and flour mixture. Stir in coconut and vanilla. Makes a thin batter.

Pour into ungreased 13 x 9 inch glass pan. Bake 45-50 minutes, until golden brown. Test by inserting a knife into the center. Let cool. It will deflate a bit.
