Pear Pie

| It's pear season, and oh, do I have a recipe for you. This pear pie is outstanding! I like to mix different kinds of pears, but that isn't necessary. Be sure to use a good crust. |
(9-inch pan)
425 degree oven
One unbaked crust
Filling:
- 2/3 cup sugar
- 3 Tbs flour
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 6 cups sliced, fresh pears, peeled and pared
- 1 tsp lemon juice
- 1 Tbs butter
Combine sugar, flour, salt and spices in a small bowl. Mix with pears, then sprinkle with lemon juice and mix again. Pour into unbaked shell; dot with butter. Add top crust (I prefer lattice).
Bake 15 minutes at 425, then lower oven temp. to 350 and bake an additional 30 minutes.. Serve slightly warm (though cold is also excellent).
