Wash and cut 2 8-oz. sweet potatoes (I use a mix of yams and sweet potatoes, which is both pretty and tasty) in half lengthwise. Cut each half lengthwise into 6 wedges. Gently put into a bowl. Mix together: Pour over potatoes and gently mix (I use my hands). Spread on a vegetable rack and place on the grill, turning when needed, until potatoes are ready. If you don't want to grill outdoors, place potatoes on a baking sheet and bake at 425 approx. 25 minutes, or until tender. Yum!! August 2009 |
