Roasted Sweet Potatoes

We love to grill out, especially when the weather is hot. Here's a delicious way to grill sweet potatoes, from the 2008 Cooking Light cookbook.  

Wash and cut 2 8-oz. sweet potatoes (I use a mix of yams and sweet potatoes, which is both pretty and tasty) in half lengthwise. Cut each half lengthwise into 6 wedges. Gently put into a bowl.

Mix together:
1-2 Tbs olive oil
1/2 tsp salt
1/2 tsp ground cumin
1/4 tsp cayenne

Pour over potatoes and gently mix (I use my hands). Spread on a vegetable rack and place on the grill, turning when needed, until potatoes are ready. If you don't want to grill outdoors, place potatoes on a baking sheet and bake at 425 approx. 25 minutes, or until tender.
