Scones with Orange Butter

In cold weather, I love warm bread with breakfast. Or with lunch or dinner. This is a fabulous scone recipe. The orange butter makes these a real taste treat. Try it, you'll love it.

Ingredients:

Scones:
2 pounds flour, sifted
1/8 tsp salt
3 heaping Tbs baking powder
2 ounces granulated sugar
zest of 1 orange, finely grated
6 oz. butter
3 eggs
2 cups milk

egg wash:
whisk 1 egg with 1 tsp milk

Preheat oven to 475 degrees. Place sifted flour in a large bowl. Add salt, baking powder, granulated sugar and orange zest. Add butter and mix with two forks until the size of peas. Make a well in the center of the mix. Whisk together the eggs and milk and pour into the center. Hand mix until just blended. Turn dough onto floured surface. Pat down and cut into scones. Brush with egg wash and sprinkle lightly with granulated sugar.

Place on lightly greased baking sheet (I use Silpat instead) and bake 10-12 min., or until golden. While baking, make the orange butter.

Orange butter:
6 oz. butter at room temperature
3 tsp. grated orange zest
7 ounces confectioners' sugar, sifted
Using a mixer, cream butter and sugar. Add confectioners' sugar and beat until fluffy. Store in a covered dish in the refrigerator.

Serve scones (warm or at room temperature) with orange butter.
